Thai Detox Curry

When you feed your body the right kinds of food you will be amazed and what it is capable of and how these natural ingredients work in tandem with each other. Fast food is great but it doesn't have to be from a tin or a package - something simple like thai green curry paste can be made really quickly and easily at home and the entire dish ready in 30 minutes - and that includes making the curry paste as well as the curry.

It is one of my favourite meals because:

1- It is quick (essential)

2- It's packed with veggies

3- Everyone loves it

4- Its green - and green food is great for all of us that are juggling and need some magnesium to help to restore your nervous system.

5- It's a great food to help reduce your body burden of toxins - aka a detox food because all of the ingredients naturally support your liver and detoxification pathways.

Curry paste ingredients:

  • 1 bulb of garlic (8-10 cloves)

  • 2 lemon grass stalks

  • 2 shallots roughly chopped

  • 50 grams coriander leaves

  • thumb size piece of ginger

  • 1 lime squeezed

  • the rind of one lime

  • 4-5 kefir lime leaves (optional)

  • 2 teaspoons coriander seeds

  • 1 teaspoon pepper cones

  • 1 teaspoon chilli flakes

  • 1 tsp pink salt

Blend the above ingredients with a little avocado oil or olive oil until you have a paste.

Coriander is very good at binding to toxic metals and helping to remove them from the body- with the help of all the fibre in the meal, once the toxins have been bound they can effectively be eliminated.

Your liver loves garlic and it supports liver detoxification. To retain the goodness of garlic let it sit for 10 minutes after chopping it to activate the enzyme allicin that contains many of its benefits which are otherwise lost in heat.

Lime rind is also very good for your liver and contains a phytochemical called limonene that supports liver detoxification and may prevent tumour cell proliferation.

Ginger is anti inflammatory and so is lemon grass. They are also detoxifiers, help with digestion and are able to reduce pain.

Phytonutrients produced by broccoli can enhance phase 2 liver enzymes in removing toxins from our body. Eating vegetables from the cruciferous family boost your livers ability to clear chemicals from your body and this enhanced liver function that can last up to 2 weeks. Vegetables that are part of the cruciferous family of vegetables include: Broccoli, cauliflower, radish, rocket, broccoli sprouts, cabbage and cress.

When you use the right ingredients there is a medicinal quality in everything ... Food really is medicine

Curry ingredients:

  • 2 shallots slices

  • 1 thumb size piece of ginger finely slices

  • 5-6 garlic cloves finely sliced

  • 2, 400g tins of coconut milk - I use Biona Organic

  • 4-5 cups of veggies - baby sweetcorn, sugar snap peas, broccoli florets, cauliflower, aubergine, mushrooms .... anything that takes your fancy

  • Protein - Chicken, prawns or tofu. 

Method

To make the curry sauce sautee the shallots, garlic and ginger for a few minutes in a tsp of coconut oil until they catch some colour. Then add the curry paste and simmer it for 2-3 minutes.

If you are using chicken add it now and let it cook through.

If not add the coconut milk now.

Once simmering add the veggies and let it simmer until cooked.

If adding prawns add it now - cover and let the steam cook them through.

Serve with brown rice. Easy!

Serves 5

You could double up the paste mixture and freeze half ready for an even quicker meal next time.
