Moroccan Stew

I was feeling really cold this morning and felt like I needed to put the heating on - the darkness and rain was a reminder that we have left summer behind and are now entering into the colder months. I started to crave this, i think its because its really warming and comforting - it's a quick and fuss free recipe that always makes me feel better. Try it with some brown rice and some avocados.

  • 1 onion sliced

  • 3 garlic cloves sliced

  • 1 aubergine cut into chunks

  • 1 courgette cut into chunks

  • 1 red pepper cut into chunks

  • 1.5 tins of tinned tomato (600g)

  • 1 tin of chick peas (400g)

  • 1 heap tablespoon of cumin

  • 1 tsp cayenne pepper (if you like it spicy)

  • 1 tsp turmeric

Warm a couple of tablespoons olive oil in a pan and add the onion, garlic, cumin, cayenne pepper and turmeric. Once warmed through and the onions is starting to catch colour add all the chopped vegetables and mix everything through.

To this then add the chopped tomatoes and an additional half glass of water.

Season with salt and pepper.

Put on a low flame and let it simmer for 30 minutes until the vegetables are all tender. Add the chick peas. Turn off the heat and let everything warm through.

Serve with brown rice and avocados
