GREEN CRACKERS

This is the first recipe reel I made that went viral on instagram. Two years ago I was making crackers from my leftover fibre from juicing greens, so many of you said you wanted to make the crackers too but didn’t juice and so I developed this recipe for you and it’s one I still make regularly, even today. They are such a great source of fibre, they are rich in magnesium, delicious and easy to make. I literally took a whole bag of greens, blended it, added some seeds and baked! They give you a cracker that gives you up to 1/2 your suggested fibre intake in a day. and added plenty of seeds to create a delicious nutrient-dense cracker. Much to my delight, author and actor Padma Lakshmi made these and said she loved them too.

So why do they tick so many boxes? Firstly the base in 4 tbs of chia seeds, that’s 16g of fibre just there without including the additional cup and a half of other seeds. These seeds, are rich in ALA which is a precursor to EPA and DHA, out anti-inflammatory omega 3’s. I also like to use watercress for the crackers, it has so many benefits but it’s also a bitter food and one I don’t usually enjoy as its quite strong tasting. So its camouflaged really well in a cracker. But you can change it depending on what you fancy, for example spinach has the most magnesium of all the greens so if you wanted more magnesium you may opt for that. All greens though will contain magnesium so go with what you don’t usually have and also whats available. Anyway, its a gluten free, dairy free, easy to make and highly nutritious snack you can have just like that or top with something or dip into something . ENJOY. MAKES 1 LARGE CRACKER
SERVES 2
80g greens (I like watercress, but rocket, spinach or kale are also good)

4 tbsp chia seeds 185g mixed seeds
2 tsp of any herbs and

spices you like (I suggest 1 tsp chopped rosemary, 1⁄2 tsp paprika, 1⁄2 tsp chilli flakes)

Preheat the oven to 140°C/Fan 120°C.

Blitz the greens in a blender with about 100ml of water. Tip this into a bowl, add the chia seeds and allow them to soak up the liquid. Then, add the mixed seeds and herbs and spices and stir well.

Turn the mixture out on to a piece of baking parchment and cover with another piece. Flatten the mixture with your hands or a rolling pin until nice and thin, then remove the top piece of parchment. Lift the cracker on the parchment on to a baking tray.

Place in the oven and bake for 30 minutes, then turn the cracker over and bake for another 30 minutes until crunchy. Remove and leave to cool, then break it into pieces.
