Mince Pie Banana Bread
If you’re obsessed with banana bread and also enjoy a mince pie, you are going to love my banana bread with a mince pie filling running through the middle, spices in the base and it’s even topped with a spiced sprinkle . Its’ warm, cosy, spicy , juicy and perfect for the festive season. Each slice has an amazing 8 g of fibre and 9 grams of protein, won’t cause any dips in energy and its gorgeous with a dollop of greek yoghurt and even freezes well. Perfect for the festive season
Here is how you make it:
Start by making your mince pie filling:
1 medium apple cut into small chunks
1/2 cup of sultanas
Rind of one orange
If you have any lime or lemon you could add the rind too but it’s optional
1 tsp cinnamon , 1/2 tsp nutmeg, 1/2 tsp ginger, 1/2 tsp cardamon , 1/2 tsp clove
Add 1/4 cup of water and everything else to a pan and simmer on low until the apples are soft (5-6 minutes) and the water should all be gone.
Now cut the orange in half and squeeze the juice into the mixture. Mix. It should all get soaked up.
Take 1/2 a cup of walnut and chop finely and add this. Set aside and leave to cool to room temperature or put in there fridge.
Banana Bread Recipe
3 medium banana or 2 large ones mashed
Add your spices and coconut sugar to this. I added:
1 tsp cinnamon and 1/2 a tsp of ginger and nutmeg and 1/4 of clove and 1/4 cup of coconut sugar. Mix well and then add to this:
1, 1/4 cup ground almonds
1/2 cup oat flour (just blended oats)
2 tablespoon ground flaxseed
2 eggs
1/4 cup extra virgin olive oil
1 tsp baking powder
Pinch of salt
Mix well and add 3/4 to a lined loaf tin.
Then add the mince pie filling to this. Keep it in the middle so that here is some space round the edges. Then add the rest of your banana Breda mixture to the top of this.
I added a spiced crumble to the top which was 1/2 tsp of coconut sugar and a little of all the spices I used. Mixed this up and sprinkled on top. Gives it a lovely colour and crunch.
Bake for 30-35 minutes at 180 degrees. Mine is fan oven but time will vary according to your oven
Let cool and enjoy. So good!
