Tuna Nicoise Smashed Potato Quiche
It has all the classic ingredients of a tuna nicoise salad but just arranged differently!
You still have the potatoes but I’ve used them as the base of this quiche instead and its so good because you get a gorgeous and crispy outside., think smashed, crispy potatoes. You also have the eggs but they are used as the filling instead. All the other class ingredients in here too and you can add/ minus anything you fancy and make it more personalised.
I used leftover potatoes for this and it’s a great way to recycle them. Leftover potatoes are also great because once they are refrigerated (either before or after you make this) they create resistant starch. This is simply starch that crystallises and then ‘resists’ digestion staying in the gut, traveling to the colon and then feeding our beneficial microbes. There are 2 benefits to this, the microbes that get fed and also the lower blood glucose response as there is less sugar that enters the blood stream after eating the potatoes. Win win …
It’s a great one to make on the weekend if you enjoy doing some batch cooking and it’s easy to transport to work and works as breakfast, lunch or dinner. I love how it works for all meals.
Here is the recipe:
5 medium sized potatoes boil and then cooled
4 eggs
120ml milk of choice
Handful of parmesan. You can add more/ less depending on how cheesy you want it
18 green beans chopped in half
18 pitted kalamata olives
10 cherry tomatoes cut in half
Half a medium red onion tinkly sliced
A few springs of dill
Bake for 35-45 mins on 180 for fan oven
Feeds. 6-8 people
Put your oven on to 180C. Line a baking dish. I used a 24cm round one that I lined with parchment paper and then I smashed my potatoes to line the bottom and then to also cover the sides slightly too.
Then just layer on your toppings.
Whisk your eggs. I used 4 large eggs. I your eggs are smaller you will want 5. Top with your whisked eggs and then pop in the oven for 35-45 mins. Enjoy with some leafy greens
